Black Bean Quesadilla

Ok, I have a confession. This meal initially started out as an epic fail. I initally wanted for this to be a crunchy black bean taco. However, the crunchy tacos didn't exactly work out the way I had planned.

Talk about a mess. My tacos kept falling apart and my ingredients just wouldn't fit into the tacos properly. So, I had to come up with another options...QUESADILLAS!!!


I'm not quite sure why I didn't think to make this into a quesadilla to begin with, but I'm glad I did.

Now for me honestly, I would recommend eating these as soon as their finished cooking. There's something about a crunchy tortilla, all those veggies, and topped with the flavors of cheese straight from the stove. I love it, and it is now one of my favorite lunches to prepare when I want to make something quick.



Ingredients:
-Black Beans
-Cayenne Pepper
-Salt
-Mrs. Dash Original Blend
-Red onion
-Yellow, Red, and Green bellpeppers
-Shredded cheese
-Tortillas

Directions:
-Begin by slicing your veggies. Once sliced, you can add your veggies to a medium heat frying pan. Throw in your beans at this point too.  I like to add in my seasonings here as well.
-Allow the veggies and beans to cook through. Remove from frying pan and set aside.
-Take your flour tortilla and place flatly on one side. I like to place a bit of cheese on top of this tortilla so that it can begin melting.
-Apply the veggies and beans that were set aside on top the tortilla and melted cheese. You may need to firmly press your mixture to the tortilla so that it all fits. This is loaded.
-Apply another coating of shredded cheese on top of the veggies before apply your second tortilla on top of this.
-Taking your spatula, carefully flip the quesadilla over to allow the other side of the tortilla to become golden brown.

If you want to spice it up, you can always add some salsa or a chipotle sauce. What I love the most about this quesadilla is that it literally takes little to no time to make.
