Kung Pao Tofu Stir Fry

This week for dinner, I was in the mood for a stir fry. I wanted to step outside of the usual broccoli and carrot stir fry, and decided to incorporate tofu into the mix with some colorful peppers.

For those that know, tofu is not my favorite. However, I am learning new ways to add this great source of protein into my meals. To my surprise, I enjoyed it very much in this dish. Tofu just has an interesting texture that if not prepared right, it could really destroy the entire meal. But after watching several Youtube videos, I believe I finally got it right.

Here's what to do:

Ingredients:
-Extra firm tofu
-Mushrooms
-Yellow, orange, and red bell peppers
-Panda Express Kung Pao stir fry sauce
-White rice

Directions:
-Take your tofu and wrap in a cloth or paper towel. You will need to get as much moisture out of the tofu as possible.
-As you allow the moisture to be removed from the tofu, you can begin slicing your bell peppers and mushrooms
-Take your peppers and mushroom and add to a skillet. You can use oil of your choice to coat the skillet. Allow the veggies to become tender
-Your tofu should now be ready. I chose to prepare my tofu in a separate pan. Cut the tofu into little cubes. You can season with salt, cayenne pepper, and garlic powder.
-Add tofu into a well coated pan. I used oil of my choice. Allow the tofu to cook on each side or until a crispy golden brown.
-You can now add your tofu into the skillet with your bell peppers and mushrooms. Pour the Kung Pao stir fry sauce over top. Allow for sauce to thicken and evenly coat the tofu and veggies.
-As this simmers, you can begin making your white rice by following the instructions provided on its package.
