Fajita Pasta Bake

Did I tell you guys how much I love pasta? I love pasta. Anything with noodles I love. Pasta. Pasta. Pasta. Load me with the carbs, I don't care. I love pasta. But sometimes, pasta can get a bit boring.

It's always the same noodles and creamy sauce. After a while, you have to get creative on finding ways to spice it up. If you thought I was really mixing up Mexican and breakfast last week with my Breakfast Quesadilla, you will really see that I mixed it up a lot more with this Fajita Pasta Bake.

Fajita Pasta Bake

What? Fajitas and pasta? Yes! I'm not over exaggerating when I say that this turned out amazing! The peppers, the cheese, the sour cream...all of it combined just created a party in my mouth.

Ingredients: 
-1 box Penne Pasta

-2 Yellow, Red, and Green Bellpepper
-1 Red Onion
-2 Packs of Old El Paso Taco Seasoning (or you can use Fajita Seasoning they're basically the same. This is what I had in my pantry at the time)
-2 Tbsp of Sour Cream
-2 cups of Taco Blend shredded cheese (I purchased this from Walmart)

Directions:
-Preheat oven to 375°
-Bring a pot of water to a boil. Add your noodles to the water, and allow for noodles to soften. Do not over cook noodles. You will be adding them to the oven later.
-Slice your peppers and onions (I actually diced my onions, but you can slice if you want). Add to a skillet and allow for veggies to soften.
-Once veggies have become tender, you will add the Taco Seasoning to the veggies. Follow the instructions provided on the package.
-Once noodles have soften, drain from water. You can now mix to the veggies and seasoning.
-Add your sour cream until noodles and veggies are evenly coated.
-Bring all ingredients into a baking dish. Sprinkle cheese on top. You can literally add as little or as much on top.
-Place into the oven and allow for cheese to melt for approximately 5-10 minutes.
-Jazz it up with some parsley and voila!

  4. Pasta isn't my favourite meal - reminds me of when I had to budget every penny - but WOW! this sounds amazing. I was looking for something easy to make this week on the day I work in the evening, I'm going to give this a try!

  8. This looks like a great meal for a busy weeknight! I would substitute homemade taco seasoning to cut down on the sodium content. Thanks for sharing!
