Loaded Breakfast Quesadillas

I've been on a quesadilla kick ever since I had those Black Bean Quesadillas a couple of weeks ago. I figured why not try it for breakfast too.

Usually for breakfast, I like to keep it pretty simple. I tend to stick to quick, ready to grab, and head out of the door options. But on this day in particular, I had the time to whip up a hot breakfast before heading out to work.

Loaded Breakfast Quesadillas

I love a filling breakfast, and this quesadilla was nothing short of that. I wanted to make sure I added my usual favorite ingredients that I would include in an omelet which are spinach and mushrooms.

Ingredients:
-2 eggs
-Shredded cheese
-2 flour tortillas
-Mushrooms
-Spinach

Directions:
-Take your mushrooms and spinach, and dice. Using a frying pan or skillet, coat with oil of your choice and apply the veggies to the pan
-Allow the veggies to become soft before scrambling your eggs and applying to the frying pan. Mix veggies and eggs together until eggs are thoroughly cooked. Remove from frying pan and set aside.
-Take your flour tortilla and add to the frying pan. Place a bit of cheese on top of this tortilla so that it can begin melting.
-Apply your scrambled egg mixture on top the tortilla in the frying pan. You may need to firmly press your mixture to the tortilla so that it all fits. This is loaded.
-Apply another coating of shredded cheese on top of the scrambled egg mixture before apply your second tortilla on top of this.
-Taking your spatula, carefully flip the quesadilla over to allow the other side of the tortilla to become golden brown.

Loaded Breakfast Quesadillas

If you'd like to give this quesadilla an extra kick, try it with some salsa. I know...that sounds kind of weird. Salsa for breakfast??? But, trust me when I say that it actually gives this breakfast quesadilla some extra flavor. Trust me.You can even liven it up a bit with some avocado. The options are limitless. 

Who says we have to stay inside a box for breakfast?
