Buffalo Cauliflower Bites

I shared on my Instagram during Super Bowl weekend some cauliflower bites that I prepared for myself. While everyone indulged in their usual football appetizers, I had to get creative and think about what vegetarian options could I pair with a good old beer and football.

Now the obvious is a vegetable tray. Celery, broccoli, carrots...you know the usual. Or maybe even mozarella sticks or chips with dip. But one thing I miss the most with a nice cold beer are hot wings.

I've done my version of "fried chicken" before on the site when I created my Fried Cauliflower Bites, but I wanted those good sticky wet wings. Those wings that are so messy you need a wet wipe while you eat them.

Buffalo Cauliflower Bites

Now as a forewarning, these do not have the similar crispy texture as your average buffalo chicken wing. In fact, it's literally just cauliflower dipped in hot sauce. I chose to bake my cauliflower in the oven for 30 minutes before adding the buffalo sauce to them. After the 30 minutes, I took them out of the oven and dipped them into a bowl of Red Hot's Buffalo Sauce.

I allowed the cauliflower bites to sit in the oven with the buffalo sauce for about 15 minutes. Once I took them out, I dipped them once more in buffalo sauce to get this sticky texture.

You guys know me. I try not to make my recipes too complicated or use a ton of ingredients to create them. I only used THREE ingredients.

Serving Size: 2-3 persons

Buffalo Cauliflower Bites

Ingredients:
  • 1 head of cauliflower chopped (you can use one small bag of frozen cauliflower too)
  • 1/2 cup of Red Hot's Buffalo Sauce
  • 1 tbsp of vegetable oil
Directions:
  • Preheat your oven to 450°F
  • Take your head of cauliflower and begin to chop cauliflower into small chunks
  • On an oven sheet pan spread out your cauliflower and drizzle vegetable oil over top. Mix cauliflower so that the oil coats each one
  • Put cauliflower into oven for 30 minutes. While cauliflower is baking, add 1/2 cup of Red's Hot Buffalo Sauce into a small to medium bowl
  • Remove cauliflower from the oven and dip each cauliflower chunk into the bowl of hot sauce. Placing each back onto the oven sheet
  • Add cauliflower back into the oven and allow to sit for an additional 15 minutes
  • After 15 minutes, remove cauliflower from the oven and dip once more into the bowl of hot sauce
  • Allow cauliflower to cool for 5-10 minutes and enjoy!

Buffalo Cauliflower Bites

This app was really a hit for me. If you want to make it fancy, pair it with some celery sticks and ranch dressing. It may not be the healthiest as it is dipped in a crap ton of hot sauce, but at least it's on top of a vegetable...right?

  7. I have recently discovered that I don't hate cauliflower like I thought I did. I've made it as a pizza crust (which only partly worked) and as mashed "potatoes" which were delicious. I'll have to give this a try next because my husband will eat anything with hot sauce!
