Spinach Egg Breakfast Sandwich

A couple of weeks ago, I featured on my Facebook page a very simple sandwich that I made for breakfast , and you all wanted to know how exactly did I make it. So, I decided to add it here to the blog as well.


This is one of those recipes that is so simple I'm not even sure I can call it a recipe. I literally woke up that morning wanting something simple, something filling, and something fast. I like to think that this Spinach Egg Breakfast Sandwich is nothing more but an elegant grilled cheese sandwich.

If you know how to scramble an egg and make toast, this recipe is a no brainer for you. It literally takes little to nothing to prepare.

Obviously, there is no right or wrong way to create this breakfast sandwich. You can add bell pepper,s onions, mushrooms, and so much more.

Serving Size: 1 Sandwich

The Spinach Egg Breakfast Sandwich

Ingredients:
  • 2 slices Nature's Own Honey Wheat Bread
  • 2 eggs
  • 1 slice of American cheese (or cheese of your choice)
  • Small handful of spinach
  • 2 slices of tomato
  • 1 tbsp of mayo


Directions:
  • Toast bread until a golden brown or to your liking
  • Once bread is toasted, you can add your mayo and sliced cheese to both slices of bread
  • In a mixing bowl, crack two eggs and scramble
  • In a small frying pan, pour eggs and allow to cook. Do not stir. Allow eggs to form into a "pancake"
  • As eggs begin to settle, set onto one sliced bread. I  flipped my egg pancake into a half so that it fits evenly on the bread. 
  • Begin to form your sandwich adding your spinach and tomatoes. 
  • Place the second toasted bread on top and you have a sandwich
