Teriyaki Cauliflower Quesadillas

Try saying that five times really fast? Teriyaki Cauliflower Quesadillas. You guys probably have an idea on how this recipe came about. It was a random Saturday afternoon and I needed an idea for lunch.

I've featured this recipe on my Instastories, and you guys wanted to know exactly what I did to prepare the cauliflower. Pretty simple. I actually made these the same time I was making the Buffalo Cauliflower Bites. Instead of preparing these in the oven, I actually cooked them over the stovetop.

Teriyaki Cauliflower Quesadilla


Serving Size: 1 serving

Teriyaki Cauliflower Quesadilla

Ingredients:
  • 1 flour tortilla
  • 1/2 cup chopped spinach
  • Chopped cauliflower (I eyeballed this. Enough that will fit onto your tortilla)
  • 2 Tbsp of teriyaki sauce of your choice
  • Diced red onions (I eyeballed this)
  • Shredded provolone cheese (I eyeballed this)

Directions:
  • In a frying pan on medium to high heat, add your cauliflower while stirring ocassionally until cauliflower becomes slightly tender
  • Stir in your teriyaki sauce over cauliflower and allow to sit for 10 minutes or until sauce sticks to cauliflower. Set cauliflower aside when ready
  • Lay tortilla flat and add your cheese, and the remaining fillings to one half of the tortilla
  • Add a second layer of cheese and taking the other half of the tortilla, flip over so that it covers the side of the quesadilla with your fillings
  • Add tortilla to frying pan on medium to high heat and allow the side to reach a golden brown. Flip over and allow the other side to brown as well

I've featured my quesadillas on the blog a few times before. Whether it was for breakfast or for lunch, it always turns out to be the perfect meal.

  1. LOL!! I'm such a dork! I thought the tortillas were made of cauliflower and was so impressed that you got them to look like REAL cauliflower!

  2. Oh my, this seriously makes me SO hungry just looking at the pictures! I am obsessed with all things Teriyaki but haven't ever tried it on cauliflower!! YUM YUM YUM!!
