Buffalo Cauliflower Bites

I shared on my Instagram during Super Bowl weekend some cauliflower bites that I prepared for myself. While everyone indulged in their usual football appetizers, I had to get creative and think about what vegetarian options could I pair with a good old beer and football.

Now the obvious is a vegetable tray. Celery, broccoli, carrots…you know the usual. Or maybe even mozarella sticks or chips with dip. But one thing I miss the most with a nice cold beer are hot wings.

I’ve done my version of “fried chicken” before on the site when I created my Fried Cauliflower Bites, but I wanted those good sticky wet wings. Those wings that are so messy you need a wet wipe while you eat them.


Buffalo Cauliflower Bites

Now as a forewarning, these do not have the similar crispy texture as your average buffalo chicken wing. In fact, it’s literally just cauliflower dipped in hot sauce. I chose to bake my cauliflower in the oven for 30 minutes before adding the buffalo sauce to them. After the 30 minutes, I took them out of the oven and dipped them into a bowl of Red Hot’s Buffalo Sauce.

I allowed the cauliflower bites to sit in the oven with the buffalo sauce for about 15 minutes. Once I took them out, I dipped them once more in buffalo sauce to get this sticky texture.

You guys know me. I try not to make my recipes too complicated or use a ton of ingredients to create them. I only used THREE ingredients.

This app was really a hit for me. If you want to make it fancy, pair it with some celery sticks and ranch dressing. It may not be the healthiest as it is dipped in a crap ton of hot sauce, but at least it’s on top of a vegetable…right?

Buffalo Cauliflower Bites

These awesome Buffalo Cauliflower Bites are the perfect meat substitute when you’re wanting classic wings.
Prep Time: 10 mins | Cook Time: 45 mins | Total Time: 55 mins
Course: Appetizer
Servings: 3 servings

Ingredients
1 head of cauliflower
1/2 cup of Red’s Buffalo Hot Sauce
1 tbsp of vegetable oil

Instructions
1. Preheat oven to 450°F
2. Take your head of cauliflower and begin to chop into small florets or chunks
3. On an oven sheet pan, spread of cauliflower and drizzle vegetable oil over top. Mix cauliflower so that each one is coated
4. Put cauliflower into oven and allow to bake for 30 minutes
5. In a separate bowl, add 1/2 cup of hot sauce into a bowl
6. Using a fork, carefully dip cauliflower into hot sauce bowl, and placing each back onto the baking sheet
7. Once completed, add cauliflower back into the oven and allow to bake some more for 15 minutes
8. Once 15 minutes is completed, remove cauliflower from oven and carefully dip once more into the bowl of hot sauce
9. Allow cauliflower to cool for 5-10 minutes

Notes
Pair your cauliflower bites with ranch or bleu cheese
If you want your bites to have some extra crunch, you can use bread crumbs after dipping into hot sauce
