Cauliflower Mac and Cheese

Mac and cheese have been one of those side dishes that I've watched my mother prepare several times, but never really made it for myself. Her mac and cheese is just so amazing I've been too intimidated to make my own. But I feel I have watched her make it enough that I know the gist of what she uses to prepare it.

Mac and cheese is NOT healthy at all. Well, at least not this version of it.

I made this Cauliflower Mac and Cheese in hopes that I could take a break from pasta, but let's be honest...even with the added vegetables this dish still isn't the healthiest. But, it tastes so damn good.

What Did I Use

Basically, I prepared this Cauliflower Mac and Cheese similarly to how I've seen my mother prepare her dish. I used frozen cauliflower (about two bags of 12 oz), shredded cheddar cheese blend, milk, a crap ton of butter, and salt and pepper to taste.

I told you this wasn't healthy.

My mom actually likes to use block cheese, but I opted to use the shredded cheese blend. The shredded cheese blend has three types of cheese (sharp and mild cheddar, and monterey cheese). I liked having the variety of cheese added to this as it gives it a powerful flavor.

You can always add more cheese to this if you like. I personally think having the right balance between cauliflower and cheese really sets the dish. There's just the right amount of cauliflower for crunch and cheese in between.

2 12 oz frozen bag cauliflower floret
1/2 cup milk (I used 2%)
1.5 cup of shredded cheddar cheese blend
1 tsp salt and pepper to taste
2 tbsp melted butter

1. Preheat your oven to 400°F
2. On an oven sheet, roast your cauliflower for approximately 20 minutes to remove the moisture
3. Once cauliflower has roasted move to a baking dish
4. Add in your milk, melted butter, and one cup of cheese
4. Add salt and pepper, and stir everything together until evenly mixed
5. Add to your oven and allow to bake for 30-40 minutes covered
6. Take your dish and gently stir to check if butter and milk have cooked down
7. Sprinkle more cheese over top and add back to the oven for an additional 10 minutes or until a golden brown on top
8. Remove from oven and allow to cool before serving

You can use a plant-based milk if you like
Block cheese works just as fine. I recommend one or two blocks for this dish
If you prefer fresh cauliflower, one head should do the trick

  1. This recipe sounds great, but I'm with your mom, I buy the block and shred it myself. It's SO much creamier when you don't buy pre grated cheese.
